Oh give me a home, where the skinny joes roam, and they're made from healthy bison we say. Where seldom is heard, a discouraging word, and the cows can be happy today.

Don't have a COW, try some buffalo. Yes, we're making our own delicious Skinny Joes with ground bison. When we think of the meals that top our hubby's lists, Sloppy Joes is up there. What's not to love about a soft bun stuffed with a mountain of zesty meat mixure? It's a manwich right? Yes, but at least this manwich won't send your cholesterol through the clouds.

Buffalo is now being called "the other red meat". It is high in protein and lower in saturated fat than any cut of beef. According to WISEgeek "It contains far less calories and cholesterol than either beef or chicken. For example, bison meat contains 2.42 g. fat, 143 calories, and 82 mg. of cholesterol per 100 grams of cooked meat. By comparison, beef has 9.28 g. fat, 211 calories, and 86 g. cholesterol. Skinless chicken contains 7.41 grams of fat, 190 calories and 89 mg. of cholesterol." It is mild flavored and easy to cook with. Buffalo are left to roam and eat grass which is a far more peaceful and healthier life than we can predict for most cows.

Because we're in the Wild West, your Skinny Scoopers were lucky enough to find ground bison in our local grocery store. If yours doesn't carry bison, try your local butcher.

For Skinny Joes you'll need the following:

2 pounds ground bison (90% fat free)
1 teaspoon olive oil
1 cup chopped onion
1/2 cup chopped green pepper
1 rib celery chopped
1 TBS chili powder
1 TBS brown sugar
1 TBS Worchestershire
1/2 teaspoon paprika
6 TBS tomato paste
Salt and pepper to taste

Toss olive oil, onion, green pepper and celery in pan. Saute for 3-4 minutes. Add bison and brown. If you have any drippings at all, drain them but there weren't any when we cooked. Next, add tomato paste, spices and a splash of water. Cook down until blended. Serve on your choice of roll. BEWARE buns can be big and we're not just talking about ours. Some rolls and sandwich buns can run you upwards of 300 calories and 6 POINTS®. Try an Oroweat Sandwich Thin or one of the many lower calorie whole wheat bun options.

A serving of this manwich meal maker is a 1/2 cup full of meat. We ate ours "animal style" without a bun for around 150 calories and just 3 POINTS. If you can't resist the urge, slap your meat on a 1 or 2 POINTS roll for a 5 POINTS meal. Look out swine, this cousin of the bovine is a delicious low fat meat to eat. Enjoy!

LOVE, the manwich.... thank you for this awesome Skinny Joe recipe. This sounds amazing! I can't believe the fat/cal savings of the bison! I also like the idea that they are grass grazing critters... makes for healthier animals, environment, and people! Great job as always!

I love bison - but you really gotta make sure it's grass-fed/grass-finished in order to get the full BANG for it's delicious BUCK... along the same lines, you should try and find all of your red meat grass-fed & grass-finished! I love beef, elk, ostrich, venison, lamb& goat this way too! :)

This is the 2nd time this week I've heard about cooking with Bison. But I can't find it at any of my local supermarkets. How does Bison compare in cost to chicken and beef?
