Steak and potatoes can be ON the menu this Valentine's day. Whether you're sharing the evening with your sweetie or getting together with friends, this is a delicious and simple recipe that is light and healthy.
We started with a 20 ounce flank steak. This is a lean cut of meat and can be a bit on the tough side. Rather than use a marinade, we made this recipe with a secret ingredient, McCormick™ Crusting Blends. There are different varieties of these flavorful blends. For this recipe we used French Onion, Pepper and Herb.
Start by rinsing your flank steak to remove any blood. Pat dry. Use 1/4 cup of your favorite dijon or spicy brown mustard. Spread 1/2 of the mustard on one side of the steak. Coat with 3 servings McCormick's crustings. Flip the steak and repeat using the other half of your mustard and 3 more servings Crusting Blends. This amounts to around 6 TBS of McCormick Crusting Blends.
Next, heat up a skillet or grill pan. We used a griddle on the range top for winter cooking and easy clean up. Spread 1 TSP olive oil on grill pan. Once heated, add your steak. Cook 6-8 minutes each side depending on size and thickness of meat. Carefully remove steak and let stand for 5-10 minutes. Slice diagonally into strips. This steak made 4 healthy servings for 6-8 POINTS each.
We added a tasty side dish item to this steak dinner. Try our Skinny Scoopers spicy sweet potato wedges. To start, preheat oven to 400 degrees. Coat a cookie sheet with nonstick spray. Next, peel and slice 2 medium to large sweet potatoes into wedges. Place them in a large bowl. Add 2 teaspoons olive oil, 1 TBS brown sugar, 1 teaspoon chopped fresh rosemary, a sprinkle of salt and a dash of crushed red pepper flakes. Toss to coat then bake on a cookie sheet for 12-15 minutes until crispy and lightly browned.
